Apple pie filling
We got a lot of apples and made pie filling and apple butter.

Flint corn
We dried this corn in a greenhouse and store it in a humidity-controlled room. We shell it and grind it for fresh corn meal.

Canned tomatoes
As our Romalina tomatoes ripened we canned a batch. These Romalinas have a lovely color.

Our first batch of canned tomatoes of this year
We began as early as we could get ripe Romalinas. The supply of these paste tomatoes was supplemented by our trial crop of Brandywine tomatoes.

Canning production line
Our kitchen is small so we use every bit of space as efficiently as we can, stretching from the stove and one side of the sink to the other. We blanch and skin tomatoes, sterilize jars, pack them with tomatoes and then cook in a water bath.

Canned tomatoes
Here's a second batch of canned tomatoes. We're better at the procedure and can handle more bottles. We're really pleased with the way they look.

Salsa time!
We had loads of peppers from our hoop house from August through September (Poblano, Anaheim and California Wonder) as well as a ton of tomatillos so we made several types of salsa: green, with tomatoes, mild and spicy. Bring on the chips!

Peppers
Waiting for conversion to salsa are these Poblano, Anaheim and Wonder sweet peppers. They were a small part of a harvest in early September.
